Hot Sausage & Pepper Soup

Ingredients
  

  • 1.4 pounds hot Italian sausage
  • 6 cups raw spinach
  • 1 medium green bell pepper
  • 1 medium red bell pepper
  • ½ medium onion
  • 1 can tomatoes with jalapenos
  • 2 cups beef stock
  • 2 teaspoons chili powder
  • 2 teaspoons cumin
  • 2 teaspoons minced garlic
  • 1 teaspoon Italian seasoning
  • ½ teaspoon kosher salt

Instructions
 

  • Rip sausage into chunks and cook it all the way through.
  • Add sliced peppers, tomatoes, beef stock, and spices to crock pot. Put sausage on top and mix it well.
  • Fry up your onions and garlic, add to crock pot when translucent.
  • Add bed of spinach on top, let cook for 3 hours on high.
  • Stir after 3 hours, set to low and cook for additional 2 hours.
