Ingredients
  

Smoked Salmon Salad:

  • 6 ounce mixed green salad
  • 4 ounce smoked salmon cut into pieces
  • 1 ounce pistachios shelled and crumbled
  • ½ medium avocado cubed
  • 1 ounce blueberries

Creamy Lemon Dressing:

  • 2 tablespoons mayonnaise
  • 1 tablespoon olive oil
  • ½ medium lemon juice and zest
  • 1 teaspoon fresh garlic minced

Instructions
 

  • Gather and prep all of your ingredients.
  • Prepare the dressing by combining the mayonnaise, olive oil, garlic, and lemon juice and zest. Stir together well.
  • Assemble the salad by layering the greens, salmon, and blueberries.
  • Dress the salad and toss together.
  • Add the pistachios and avocado, then gently toss to distribute.
