Ingredients
  

  • 3 cups cauliflower florets
  • 1 cup frozen spinach thawed
  • ¼ cup cream
  • ½ medium avocado
  • 4 tablespoons butter
  • ½ cup sour cream plus additional for topping
  • ½ teaspoon salt
  • Fresh black pepper to taste

Instructions
 

  • Combine cauliflower and spinach in a microwave safe bowl or a saucepan and cook until cauliflower is very tender, about 15 minutes.
  • Add cream, avocado, butter, sour cream and seasonings and blend with an immersion blender (or place carefully in your food processor and blend) until smooth.
  • Top with sour cream if desired and serve immediately.
