Sausage and Cheese Breakfast Pie
Per pie, it is 900 Calories, 77.6g Fats, 6.86g Net Carbs, and 41.93g Protein. So, if you're looking for a light breakfast, turn this into 2 servings. They're extremely filling and I couldn't finish a whole one myself.
1 ½ large bacon and cheddar chicken sausages ¾ cup grated cheddar cheese ¼ cup coconut flour ¼ cup coconut oil 2 tablespoons coconut milk or water 5 large egg yolks 2 teaspoons lemon juice ½ teaspoon rosemary ¼ teaspoon cayenne pepper ¼ teaspoon baking soda ⅛ teaspoon kosher salt
Cube chicken sausage small and begin to fry them over medium heat. Preheat oven to 350F.
Separate 5 egg yolks from the whites and discard of the whites.
Measure out all dry flours and spices into a bowl. Mix together until all dry ingredients are combined.
Beat egg yolks until creamy for about 4-5 minutes. Add coconut oil, coconut milk and lemon juice, then continue beating until well combined.
Add wet ingredients into the dry ingredients slowly. Fold 1/2 Cup cheddar cheese into the batter.
Measure batter out into 2 ramekins, filling about 3/4 the way full.
Once sausage is finished, use your fingers to "poke" it into the batter. You want the sausage to be evenly distributed.
Bake for 20 - 25 minutes, or until the tops are golden brown.
Optional: Sprinkle remaining cheese on top and broil for 3-4 minutes.
